How it is produced
Vineyard management follows the principles of organic farming, respecting the natural balance of the plants. During processing, the use of new barrels is avoided, thus preserving the original freshness of the base wines. The second fermentation takes place according to the Traditional Method, with a prolonged period on the lees that defines the texture of the bubbles. The Extra Brut dosage ultimately results in a pure, tense, and extremely elegant wine.

Previous generations have always chosen to rely on a cooperative for the entire process of wine production, since Guillaume's entry into the company, the wine-making process has been carried out within the company, producing a limited quantity every year, but always in slight growth. None new wood is used during processing so as not to alter the character of the wine.
Les Pres Dieu is the first cuvée made by Guillaume and worked in two wooden barrels. The production is only 615 bottles. The dosage of 4.5 g/l has been established; this allows the freshness of the sandy terroir of Vrigny to be maintained and the slight oxidation to be balanced. which gives this cuvée its complexity.
