Description
What type of wine it is
Domaine Pignier's Cotes du Jura Chardonnay Reculée is a structured white wine that fully showcases the Chardonnay grown in the Côtes du Jura appellation of the same name. In the glass, it expresses subtle aromas of white flowers and yellow fruits, while on the palate it reveals a crystalline freshness alongside remarkable breadth. The rounded profile and distinct savouriness define an elegant sip, supported by an excellent potential for long ageing. The winemaking uses the ouillé (topping-up) technique, combined with maturation in oak barrels to enhance the authenticity of the fruit.
Where it comes from
This wine originates in France, in the renowned Jura region, specifically on the slopes of the village of Montaigu. The vineyards are situated within a sheltered valley that benefits from a particular microclimate tempered by warm local winds. The terroir is distinguished by a complex geological layering, formed by blue-black marls rich in mica and topped by clay-limestone sandstones. The estate operates according to the principles of biodynamic agriculture, protecting the ecosystem and transferring a pure expression of the terroir into the glass.
How it is produced
The production process begins with a manual harvest, followed by a careful selection of the clusters and very slow pressing. The must is transferred directly into oak barrels without any clarification or settling, where fermentation begins spontaneously using indigenous yeasts. Ageing continues on the lees for eighteen months, with regular bâtonnage and continuous topping up to prevent oxidation. Final bottling is carried out with no filtration, respecting the product's natural biological evolution.
History and interesting facts

Today’s 37-acre vineyard still covers the slopes of Montaigu in the Côtes du Jura appellation area. In keeping with our estate’s philosophy, the vineyard is cultivated biodynamically and the wines age in oak barrels in the 700-year-old cellar. We, Marie Florence, Antoine and Jean Etienne Pignier are today perpetuating our family tradition. We aim to develop our estate by producing first-rate wines, and everything we do is governed by this quality principle. Read more
